Chizze

Chizze are a special snack typical of Reggio Emilia whose origins are probably associated with the influence of the Jewish community.


It is told that in the early decades of the 20th century, in the Jewish ghetto of Reggio Emilia - exactly in via dell’Aquila - the baker Federico Sacerdoti known as Salamein made chizze that were so delicious as to deserve newspaper articles about them.

Made with the pastry of gnocco fritto (fried pastry), they are filled and garnished with slivers of Parmigiano Reggiano cheese. They are fried in plenty of hot lard or oil. They are best served hot, but are also good when eaten cold.

It is possible to buy them in the town's cafes and bakeries.
